Thai Eggplant Red Curry

I have a friend who owns the best Thai food restaurant in my hometown, and people are often blown away by the beautiful variety of produce (much of it she grows herself!) in her spicy creations. Some of her dishes have Thai Eggplants in them,…

As a kid, I remember sitting at my Grandmother’s house on Thanksgiving poking at mushy traditional side dishes and wondering if Pilgrims had teeth. As green beans were probably the most abused back in ‘the day’, I have had a lot of fun lightening up this green bean dish recipe. Green beans should be slightly crispy, green and be coated with amazing flavor. (more…)

Once on a summer vacation to Oregon, I walked across a field with knee-high tall grass not realizing my bag was open. Somewhere along the path, my eyeglasses fell out and I spent the next several hours searching unsuccessfully.

Pepper & Onion Pasta with Parmigiano Reggiano

Pepper & Onion Pasta with Parmigiano Reggiano

When I was little, my Mom would serve us spaghetti and hand us a cylinder of powdered ‘parmesan’ or what we called ‘snow’ to sprinkle on top. It may as well have been snow because it was just as flavorless. (more…)

Creating a Food Friendly Event with Selectivor

Creating a Food Friendly Event with Selectivor

I put a lot of love and thought into my meal planning when I entertain. While I do ask my guests if they have any food allergies, sensitivities or preferences, sometimes I forget– or worse, my guests will not tell me about foods they just don’t like.  I’ve had bowls of fresh salads, casseroles, rice dishes passed over by friends because there was one ingredient or spice in it they didn’t care of, or the offending food gave them digestive issues. Had I just known about the problem foods, I would have modified my recipes so everyone had something to enjoy! (more…)
