As a kid, I remember sitting at my Grandmother’s house on Thanksgiving poking at mushy traditional side dishes and wondering if Pilgrims had teeth. We had soft mashed potatoes, squishy sweet potatoes with marshmallow fluff, soggy stuffing, gelled cranberry and sad overcooked green beans soaked in creamy mystery sauce that had more of a brown hue vs. green. It’s those vivid memories that fueled my passion to have a new healthy relationship with food and allow my dishes to have texture and flavor. As green beans were probably the most abused back in ‘the day’, I have had a lot of fun lightening up this green bean dish recipe. Green beans should be slightly crispy, green and be coated with amazing flavor.
I love adding Kikkoman® Soy Sauce because it adds a salty depth to the green beans and Kikkoman® Panko Bread Crumbs with Parmesan offers an outstanding crunch.
Kikkoman® is not just Asian sauces and marinades – it’s more mainstream and versatile, perfect for incredible holiday recipes. Although you may use the regular Kikkoman® Soy Sauce, I prefer to use Kikkoman® Less Sodium Soy Sauce as it is perfect for those home cooks who are looking to cut down on their sodium levels, without sacrificing flavor.
After prep time, this refreshed traditional green bean recipe is done in only 8 minutes! Cooking times have changed dramatically since I was a kid. Those poor green beans are no longer going to sit in the oven for 2 hours! The faster prep and cooking times on my healthier recipes give me more time to play with table decor, and yes I’m obsessed with colorful Fall gourds.

Roasted Garlic Green Beans with Parmesan Panko
You Will Need:
- 5 Cups of Trimmed Fresh Green Beans
- 2 Tablespoons of Kikkoman® Less Sodium Soy Sauce
- 1/2 Cup Kikkoman® Panko Bread Crumbs
- 1/4 Cup Shredded Parmigiano Reggiano
- 2 – 1/2 Tablespoons Olive Oil
- 4 Cloves of Garlic, Diced
How To Prepare:
Preheat oven to 375 degrees.
In a large pot, bring 2 quarts of water to a boil.
Clean and trim green beans, and then blanch for 2 minutes in boiling water. Blanching will make the beans juicy and it brings out the bright green color in the beans.
Drain and put in large bowl. Add Kikkoman® Soy Sauce and 2 Tablespoons of the Olive Oil. Toss well with diced garlic.
Spread out green beans and liquid onto a cookie sheet. Bake for 5 minutes.
While the green beans are baking, add 1/2 tablespoon olive oil to a non-stick pan and put the temperature on low.
Add the Kikkoman® Panko Bread Crumbs and Parmigiano Reggiano. Churn until toasted (about 4 minutes) and turn off heat.
Remove green beans and return back to large bowl. Stir in half of the Kikkoman® Panko Bread Crumbs mixture into the hot beans.
Put green beans into a serving bowl or platter and top with the remaining Kikkoman® Panko Bread Crumbs mixture.
Serve and enjoy! If the green beans cool down, simply put in the microwave for 50 seconds to reheat.
