Summer means a bounty of fresh peppers and corn on the cob. This is a quick salad to make, but will need time to chill. Using fresh summer shishito peppers, this salad will have a kick – or will it? They say 1 out of 10 shishito peppers are spicy HOT, so you never know what you’re going to get! Sweet red peppers and sweet corn help offset the spiciness and the lime juice as a fresh zing.

Ingredients:

  • 1 tbsp. coconut oil
  • 2 cups Shishito peppers
  • 1 fresh sweet corn on the cob ear (cut corn off cob)
  • 1 cup red bell peppers, sliced
  • 1 medium zucchini sliced
  • 1 fresh lime juiced
  • Salt

Directions:

1.     Heat oil on medium heat in pan.

2.     Drop Shishito peppers into pan. Sautee and stir until peppers blister.  Add salt.

3.     Add red peppers and corn. You only want to sweat the corn and red peppers, so only leave on for 2-3 minutes max.

4.     Remove from heat and put in a glass bowl. Cool in refrigerator.

5.     Squeeze fresh lime juice and sprinkle with maldon salt to taste before serving.

The dog days of summer are slowly slipping by, but I’m THAT Mom who likes to get organized before the back to school shopping rush starts. More planning equals less stress! Years ago, my family and I went to an eco-resort in Quintana Roo, Mexico. I was about to jump into the crystal clear lagoon until I saw signs everywhere that said, “No Sunscreen”.  Signs also advocated that we shower before entering the ecopreserve’s water areas with tropical fish swimming around. I think this was the first time in my life that I had been told that sunscreen was a problem to marine life. I’ve been to Tahiti, Great Barrier Reef, Caribbean, etc. and not ONCE did it occur to me that sunscreen was a problem. It made sense, so I complied and then really began to think about all of the times I lathered up and jumped into the ocean. Yikes, what have I done?

After doing a little research on AlertDiver.com, I found that besides washing off swimmers’ skin and into the water, sunscreen can get into the sea by other means. Many sunscreen ingredients are readily absorbed through the skin. Oxybenzone, one of the most common ultraviolet-blocking chemicals in sunscreen, for example, can be detected in urine within 30 minutes of application. When you flush the toilet or wash off sunscreen in the shower, chemicals from the lotion enter the sewer. For towns near coral reefs and without sophisticated sewage treatment and management systems, this pollution is rather inevitable.*

Oxybenzone is toxic to more than just corals. It’s toxic to algae, sea urchins, fish and mammals. It inhibits embryonic development in sea urchins. It can result in gender shifts in fish, in which male fish take on female attributes, while females have reduced egg production and embryo hatchings. *

Ack! Ok, so this oxybenzone crap is horrific to our reefs and ecosystem, so what on earth is it doing to US?

The Environmental Working Group says 56% of beach and sport sunscreens contain the chemical oxybenzone. The primary function of oxybenzone is to absorb ultraviolet light, and we know oxybenzone can be absorbed through the skin. The Environmental Working Group and other toxicology experts believe that oxybenzone is linked to hormone disruption and potentially to cell damage that may lead to skin cancer. Well, that certainly defeats the purpose of sunscreen!

Other than wearing full body clothing coverage, what’s a girl to do?
