I love a nice dessert to finish off a meal, but I don’t care for overly sweet treats. When given the choice, I tend to gravitate towards the cheese and fruit platter for dessert. I’ve created this easy sweet and creamy low-sugar Holiday Cranberry Brie Bite recipe that is PERFECT any time of the year but looks so pretty on a party platter and it’s also easy to assemble.
Years ago, I started ditching regular consumpion of sugar for health reasons. Sugar is enemy #1 in the American diet as eating too much added sugar can have many negative health effects such as weight gain, blood sugar problems and an increased risk of heart disease, among many other dangerous conditions. However, that doesn’t mean I still don’t want a sweet treat! Thankfully I can make MANY of my favorite recipes that use sugar by replacing it with Steviva instead. Some Steviva products I found helpful in this easy Low-Sugar Holiday Cranberry Brie Bites are: KetoseSweet Liquid and the Steviva Blend, both are keto-friendly sweeteners.
Steviva Blend is a delicious blend of erythritol and pure stevia, in a granular form, similar to table sugar. Perfect for low carb meal plans, with zero carbs and calories, and no glycemic impact. Low-Sugar Holiday Cranberry Brie Bites
Makes at least 40 bites
You will need:
- 1 Bag of Fresh Cranberries
- 3/4 Cup Water
- 1 Cup KetoseSweet Liquid
- 1/2 Teaspoon Clove powder
- 1/2 cup Steviva Blend
- 8 oz Wheel of Brie
- Cinnamon – 2 heaping tablespoons
- Puff Pastry Sheets (2 sheets) – Each sheet should make approximately 20 bites
- One Mini-Muffin Tin
How to prepare:
Preheat oven to 350 degrees.
Wash cranberries and put them in a small pot with 3/4 cup of water. Heat cranberries on medium until berries start to pop and the skins break down.
Turn heat to low and add in the KetoseSweet Liquid and the clove powder. Simmer on low for 10-15 minutes until berries start to thicken. Turn off heat and let cool for 10 minutes.
Roll out puff pastry sheets and cut into squares about 2-1/2 x 2-1/2 inches. Put each square in a mini-muffin tin well.
Chop up brie into little 3/4 inch x 1/2 inch squares so a small square fits inside each puff pastry cup.
Spoon a little of the hot cranberry mixture onto each piece of brie. If you have extra flaps on top, fold over. If not, don’t worry, the puff pastry will ‘puff up’ while baking and form a nice baked bite.
Mix the granulated Steviva Blend mixed with cinnamon in a bowl.
Sprinkle Steviva cinnamon mixture on top of each bite.
Bake at 350 degrees for 20 minutes.
The bites are ready to be served from the oven. I used a small spoon to pop each one out onto my platter.
