Crispy Vegetarian Taco Eggrolls – Great for Bowl Games!

It’s football bowl season, so that means finger food for entertaining! Here’s a healthy vegetarian taco eggroll using JSL Vegan wrappers that is easy to whip up prior to the big game.

As these egg rolls are baked and not fried, they are low in fat but high in flavor. I’ve packed each roll with black beans, corn, diced bell pepper, spices and cheddar. I also made a refreshing yogurt cilantro lime dip that helps cool down the spicy heat.

I used Twin Dragon Eggroll wrappers as they are the only wrappers that are vegan, GMO-free and made with 100% natural ingredients. They are also very easy to work with, so if you’ve never rolled an eggroll before, never fear!

You Will Need

Makes approximately 10 large egg rolls 

  • 1 can of black beans
  • Twin Dragon Eggroll wrappers
  • 1 cup of frozen corn ( I used frozen roasted corn)
  • 1 cup of vegetarian hamburger crumbles
  • 1 cup of shredded sharp cheddar cheese
  • 1 tablespoon chili
  • 1/2 tablespoon cumin
  • 1/2 bell pepper (any variety) diced up
  • 1 cup of non-fat Greek yogurt
  • 1/2 cup fresh cilantro
  • juice from one lime
  • salt to taste
  • olive oil

 

How to Prepare

In a large mixing bowl, add beans, corn, crumbles, shredded cheese, spices, pepper and a pinch of salt. Mix until combined.

On a clean prep surface such as a bamboo cutting board, lay out one Twin Dragon Eggroll wrapper.  Angle square wrapper so that it is a diamond shape facing you. Take two spoonfuls of vegetarian taco filling and put it in the center of the wrapper.

Wet the bottom tip with water and fold over mixture. Then wet the edges of the wrapper and fold over like an envelope. Simply wetting the eggroll wrapper will help it stick to itself and create a seal.

Take the final point (also dampened with water) and fold it over snuggly to create a roll. Gently paint the tops of all rolls with olive oil.  Place on a baking sheet and bake at 350 for about 25 minutes, or until rolls appear brown and crispy on top.

Creamy Cilantro Dip

These spicy vegetarian eggrolls are great with a creamy dip. I simply blended nonfat Greek yogurt with cilantro and lime juice to make a quick tangy dip that pairs really well with the spice from the egg roll.  If you want a creamier dip, use sour cream.

These Crispy Taco Eggrolls keep their heat well, so they are ideal for serving at a football party!  However, they may not last long as your guests devour them.

TIMESAVER TIP: Prepare a bunch of rolls the day before a party and chill in the refrigerator until you’re ready to bake them.
