Miners Lettuce with Cilantro Garlic Dressing & Strawberries

Often, my weekly CSA (Community Supported Agriculture) box becomes my culinary muse, especially when it comes to salads. This week, I was overflowing with fresh leafy greens and a beautiful bunch of Claytonia, also known as Miner’s Lettuce. Claytonia has a mild, almost nutty flavor, so I wanted a dressing with a real kick to complement it. Enter this vibrant Cilantro Garlic Dressing!

This dressing is a flavor bomb, and it’s incredibly easy to whip up. The combination of fresh cilantro, pungent garlic, and a touch of parmesan creates a tangy and herbaceous sauce that elevates any salad.

Cilantro Garlic Dressing Recipe

Ingredients:

  • 1 cup fresh cilantro, packed
  • 2 cloves garlic, minced (use with caution!)
  • Salt to taste
  • 1 tablespoon virgin olive oil
  • 2 tablespoons finely grated fresh parmesan cheese
  • 1 tablespoon white wine vinegar
  • 2 tablespoons sour cream

Instructions:

  1. Combine all ingredients in a blender or food processor.
  2. Blend until smooth and creamy. Taste and adjust seasoning as needed. You may want to add a pinch of sugar to balance the acidity if desired.

Claytonia and Strawberry Salad with Cilantro Garlic Dressing

This salad is a perfect example of how the right dressing can transform simple ingredients. The mild Claytonia and sweet strawberries are a delightful contrast to the zesty dressing.

Ingredients:

  • Fresh leafy greens (such as Claytonia/Miner’s Lettuce, spinach, or mixed greens)
  • Fresh California strawberries, sliced
  • Cilantro Garlic Dressing (recipe above)

Optional additions:

  • Avocado, sliced (a perfect complement to this salad!)
  • Toasted nuts or seeds for added crunch

Instructions:

  1. Wash and dry your leafy greens.
  2. Arrange the greens on a plate or in a bowl.
  3. Top with sliced strawberries.
  4. Drizzle generously with Cilantro Garlic Dressing.
  5. If desired, add sliced avocado and/or toasted nuts or seeds.

Notes:

  • The garlic in this dressing is potent! If you prefer a milder flavor, start with one clove and add more to taste.
  • The dressing can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to experiment with other additions to the salad, such as crumbled feta cheese, red onion, or cucumber.

This salad is a celebration of fresh, seasonal ingredients. The tangy Cilantro Garlic Dressing perfectly complements the sweetness of the strawberries and the mildness of the Claytonia. It’s a quick, easy, and delicious way to enjoy the bounty of your CSA box or local farmers market. Enjoy!
