Green Coconut Soup

‘Tis the season for Rainbow Chard and it’s everywhere! Not only am I getting it in my CSA, but I see it cropping up in neighborhood gardens and it’s filling the produce aisles at the local stores. I’ll be dedicating lots of posts to chard in the next few weeks because eating in season is always best, and we’re less than a month away from St. Patrick’s Day! What a great ‘green’ soup to serve in March!

This healthy green soup is full of veggies, but is creamy from coconut milk and potato. The tangy flavor of cumin and lime complement this green combo!


1 teaspoon whole cumin
1 teaspoon olive oil
2 large potatoes (russets)
2 medium zucchini, chopped
1 bunch of rainbow chard, chopped
2 cloves garlic
4 cups vegetable stock ( I used bouillon cubes)
sea salt and ground black pepper, to taste
2 cups fresh basil
1 14-ounce can full fat coconut milk
juice of 1 lime (about 2 tablespoons)

How to Prepare:

Add water, oil, bouillon and chopped peeled potatoes to a stock pot and bring to a boil.

When the potatoes are soft, add in cumin, zucchini, chard and garlic.

When everything is ‘fork soft’ where you can stab a vegetable chunk and it goes through, add in coconut milk and stir well. Simmer on low for 8 minutes.  Season with additional salt if needed.

Turn off and heat and cool for 10 minutes.

I add fresh basil leaves and lime juice to small batches in my food processor and blend until smooth.

Serve immediately in a wide shallow soup bowl, or you can put in glass/steel containers to heat and serve later. These beautiful soup bowls from YHY are available on Amazon.

Tasty Tip – If you have extra rice or grain on hand, add a serving to the center of the soup bowl and top with more fresh basil. It adds a hearty layer!
