Spring has sprung, and I couldn’t be more excited! We had lots of rain this year here Southern California, so we are currently being rewarded with lots of flowers – and even ‘Super Blooms’ in our local deserts! In honor of our seasonal exuberance of new growth, I have created this easy Spring Soup recipe that YOU can make right now with what is most likely already in your refrigerator.
You will need:
- Vegetable Broth (6 cups)
- Garbanzo Beans (2 cups) – I soaked dried beans and simmered til cooked, but you can use canned garbanzos.
- Vegetables – What ever is in season and you can dice up!
- I used Broccoli, Green Onions, Cauliflower, Carrots, Fresh Cilantro. (Seriously, any combo of fresh vegetables will work with this soup, just include the spices below!)
- 1 teaspoon of Cumin
- 1/2 teaspoon of Coriander
- Salt to taste
- Add lots of black pepper
I simmered the ingredients for approximately 10-12 minutes of medium-high heat (slow rolling boil) and turned to low heat. The vegetables should still hold a bit of firmness. NO soggy vegetables! It’s spring! Let’s celebrate our fresh vegetables!
I topped the soup off with my red pickled onions. The tartness paired well with the garbanzos and cumin. This is completely optional, but should have some handy, or time to make a quick batch, I promise it’s worth it.
