Blueberry Banana Bread: Makes 4 mini loaves

You will need:

Ingredients

  • Butter, for greasing the loaf pan
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.2 teaspoon fine salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs, beaten
  • 2 teaspoons vanilla extract
  • 2 ripe bananas

Preparation

Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Lightly oil the paper mini-bun pans.

In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.

Pour the batter into the prepared paper mini-loaf pans (4)

Southern Fried Tofu – Wait, What? House-Autry Breader

House-Autry Mills was sending me one of their flavorful products to try, so I was excited to see which one I would get! As a fan of all food Southern, I was hoping for Hush Puppy mix because that’s simply something we don’t get enough of here in Southern California. However, I received the Chicken Breader mix. Hmmm…as a Pescatarian family (we eat fish, lacto/ovo & vegetarian diet), I had to put my thinking cap on. There is no actual Chicken in the mix, so this was an easy peasy recipe conversion.  Instead of chicken, tofu it is! I’m always looking for something fun to so with tofu, as it’s such a maleable food that can take on pretty much anything you want it to be. So, in honor of the upcoming Super Bowl and that fact that I’m a So Cal girl rooting for the Panthers, Southern Style Buffalo Tofu it is!

I sliced firm tofu into strips and let it marinate in (mixed) 1 egg + 2 tablespoons milk + 2 tablespoons of Spicy Buffalo Wing Sauce.

The tofu soaked for about an hour and then I dredged the wet strips in the House-Autry Mills Chicken Breader mix in a shallow bowl.

I put on a baking sheet, and baked on 350 degrees for 35 minutes. After 25 minutes, I did flip all my Spicy Fakey Wings so it would golden on all sides.

I let them cool for about 10 minutes and then put in front of my family. I am happy I took a picture when they came out because they disappeared within minutes. That my friends, is a success. The batter was a fabulously lightly cripsy combo with the spicy marinated tofu. Since I didn’t fry anything, there was trace amounts of fat since I only used one egg for the entire recipe. Woo! Extra bonus. Easy, healthy, spicy and hey, Southern! I do have to admit that if I had a fryer available, it would have been pretty darn tasty quickly fried up as well. 🙂

If you have kids are an looking for a fun way to get them to eat tofu, tone the sauce to their tolerance and try this recipe!

Yellow Sedum Succulents Make It Pop!

It looks like the succulent craze isn’t slowing down. If anything, succulent artistry is getting more detailed and fun varietals are finally getting the spotlight. When creating succulent landscapes or small succulent gardens, a mixture of colors and textures help elevate the design. My favorite hardy and versatile succulent right now is a ground cover called Sedum and there are a TON of varieties! Sedum is also known as stonecrops, as they favor harsh low water environments and often grow on or around rocks. Any plant that is hard to kill is the perfect plant for me.

I first noticed yellow sedum in a holiday succulent display in Old Town, San Diego. I went on a sedum hunt and found a huge variety at my local nursery. Sedum comes in different shades of reds, greens and yellows and the textures are quite varying from shallow bunches to leafy spreading cover.

I’m really into the yellowy greens right now as I think they make succulent groupings pop with color. Here’s some that I have found locally –  Sedum Gold & Sedum Sexangular (which will bloom bright yellow flowers). I know the weather has been whacky this year across the United States, but Sedum typically flowers in the spring, which is an extra-added bonus!

A Repurposed Christmas

One of my fondest memories as a child was making our own garland for the Christmas tree. The garlands usually had a limited shelf life as we’d use real food items like cranberries, or popcorn. We also made seed balls and pinecone ornaments and hang them in the trees (outdoors and indoors). Although I’m not super excited about using perishables on my tree these days, I do enjoy re-purposing items into decor.

Wine corks are plentiful in this household, so making cork ornaments is fun and easy craft. They make great gifts as well. This year I wanted to attempt to make a cork garland, but I know I’ll need hands of steel to bust a thick needle through the material. Stay tuned for that project.

I also love decorating with things that had previous lives and have now been repurposed into new and unique items. This year, I’ve been fortunate enough to receive a clever ornament made from recycled waste shells crafted by the EcoSeaTile company in Maine. The glossy glass ball has a combination of mussel and lobster shell affixed on the inside giving it a beautiful, almost jewel-like appearance with purples, reds and oranges. The EcoSeaTile.com company also creates other pretty gift products with blue and green abalone, scallop, mother-of-pearl, and clam.  Not only do these ornaments make great gifts for any coastal dweller or beach lover, but it’s so refreshing to see companies still making creative things here in the United States with our own sustainable natural (and beautiful) resources.
