I love making overnight oats because of the convenience, but more importantly, it’s one of the few breakfasts I can make that will hold my family over until lunchtime. If my daughter has a grumbling tummy mid-morning at school, then it means she can’t focus as well in class!
My Peanut Butter Overnight Oats with Truvia Natural Sweetener is hearty with peanut butter (protein) and oats (soluble fiber), yet decadent without adding any additional sugar calories. Heavy sugar-laden breakfasts do not offer my family sustainable energy to get through the morning, so we typically avoid them. If you are watching your sugar and gluten intake, this recipe is also diabetic-friendly and gluten-free. I prefer using Truvia Natural Sweetener because it’s naturally sweet flavor helps me create recipes that are lower in sugar while maintaining a great taste.
You Will Need
Overnight Oats are best in a jar or tall glass. The recipe is per serving, or per jar.
- 2 Tablespoons Natural Peanut Butter (Room Temperature)
- 1/3 Cup Nonfat Greek Yogurt
- 3 Packets of Truvia Natural Sweetener
- 3/4 Cup Milk (Low-fat or Skim)
- 1/2 Cup Rolled Oats
- 1 Teaspoon Chia Seeds
- Fresh Berries
How to Prepare:
Gather all of your ingredients and lay out clean jars in a row.
Using a measuring cup, carefully add the oats in first.
Next, add the chia seeds.
Sprinkle in three packets of Truvia Natural Sweetener per jar.
Next, slowly add yogurt and pour in the milk.
Give each jar a good stir until the all of the ingredients are mixed well.
Put the Peanut Butter Overnight Oats with Truvia Natural Sweetener jars in the refrigerator for at least 8 hours. If you don’t have lids, just use plastic wrap and a rubber band to seal the tops. Be patient! Good things come to those who wait!
In the morning, take out the Peanut Butter Overnight Oats with Truvia Natural Sweetener and add fresh berries of your choice!
