Easy Tofu Spinach Scramble

Are you looking to switch to a more plant-based diet? Check out this scrambled eggs substitute recipe using tofu. The key for making a tofu scramble is to season it more than you need to! Tofu doesn’t have much of a taste, but it takes on the flavors you add very well.  This nutrient rich breakfast is a great way to start your morning as 1/2 cup of tofu has 10grams of protein and spinach is rich in iron, calcium and magnesium.

You Will Need

  • 1 Block Tofu – mashed up into smaller bits
  • 1 tsp Cumin
  • 1/2 tsp Turmeric
  • 1/4 tsp Crushed Red Pepper
  • 1/2 tsp Coriander
  • 1 tablespoons olive oil
  • 2 tablespoons water
  • 3 cups of raw spinach
  • heavy pinch of salt and pepper to taste

How to Prepare:

In a large pan, add the water and heat on medium high. Add in the raw spinach, wilt and steam until water is gone.

Leaving the spinach in the pan, add in olive oil and mashed tofu. You just want to break the tofu up so it’s not in cubes of large chunks.

Add in all of the spices and mix well. The turmeric will give the scramble a yellow color (like eggs!). As the tofu cooks down, it will release more liquid, so you want to cook all of the moisture off until you have a scramble that is similar in texture to eggs.

Serve on top of nann bread, tortillas or toast with a little salsa on top.
