Tofu Veggie Enchilada Bake with Simply Organic

As we mosey into summer, I get so excited to see bright beautiful bell peppers back in the store and bonus – they are inexpensive! Grabbing in season organic produce, I decided to make an easy enchilada bake for dinner using Simply Organic’s Red Enchilada Simmer Sauce.

The Simply Organic pouch comes with ready-to-use delicious sauce, so no laborious time needed for this recipe. I shortened this recipe up even more by layering corn tortillas (triple layer) versus rolling individual enchiladas. This bake takes less than 30 minutes to assemble and pop in the oven, and it got rave reviews at dinner time (no leftovers!)

You Will Need:

  • 1 8oz Pouch of Simply Organic Red Enchilada Simmer Sauce
  • 1 Tablespoon Olive Oil
  • 2 Zucchinis diced
  • 2 Red or Yellow Peppers diced
  • 1 Block of Tofu, diced
  • 12 Corn Tortillas
  • 1 Can of Black Beans
  • 1/4 teaspoon of Tumeric
  • 1/4 teaspoon of Salt
  • 1/2 cup of crumbled Cotija Cheese
  • 3/4 cup shredded Cheddar Cheese

How To Prepare:

Makes 14″ pan of enchilada bake. (Serves 6)

Preheat oven to 350 degrees.

Add the olive oil to a saute’ pan and add tofu chunks. Saute on medium heat until some of the moisture cooks out. Add 1/4 teaspoon of turmeric. This adds a yellow color to the tofu, which I think is pretty.

Add in diced zucchini, bell pepper and drained and rinsed black beans. Saute’ on low for 5 minutes. Add salt to taste.

Oil the bottom of a glass pan, and put a layer of corn tortillas on the bottom. (About 3). Sprinkle the veggie tofu mixture across tortillas. Repeat again with tortillas and additional veggie tofu mixture.

On the second layer, sprinkle the 3/4 cup of shredded cheddar cheese. Top with final layer of corn tortillas.

Pour Simply Organic Red Enchilada Simmer Sauce over the layered dish. The sauce is tangy with flavor notes of smoked chilies, with a kick of ancho pepper.
