Air-fryer Ginger Shrimp Eggrolls

Air-fryer Ginger Shrimp Eggrolls

These low-fat air-fryer Ginger Shrimp Eggrolls are tasty and a better for your option on Game Day!

Using Twin Dragon Eggroll  wrappers by JSL Foods, I tuck in the shrimp and cabbage filling and then have tasty eggrolls ready to go in 12 minutes!

You Will Need:

  • 12 Twin Dragon Eggroll wrappers
  • 1 tablespoon diced fresh ginger
  • 1 garlic clove diced
  • 1 small diced yellow or red bell pepper
  • 2 sliced green onions
  • 10 oz raw shrimp
  • 2 cups of shredded cabbage
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon salt
  • 1 tablespoon soy sauce
  • vegetable oil (1-2 tablespoons for sautéing eggroll mixture)
  • olive oil to brush on eggrolls

How To Prepare:

  • Prep time: 20 minutes
  • Cook time: 25 minutes
  • Yield: 12 egg rolls

In a large sauce pan, add 1-2 tablespoons vegetable oil and heat on medium high. Add in garlic, ginger, onion and bell pepper and cabbage. After cabbage has softened, add in shrimp.

Stir in white pepper, salt and soy sauce. Cabbage should be soft and cooked down (about 8 minutes cooking time). Shrimp may not be 100% cooked, but that’s ok because it’s still going to cook more in the air-fryer.

Turn off heat and let mixture sit for a few minutes while you prep the eggroll making surface.

On a large clean cutting board or prep surface, lay flat one egg-roll wrapper.

Please 2-3 spoonfuls of shrimp cabbage mixture on wrapper in the center and across. Roll wrapper around mixture and then tuck in each side. Finish rolling and using water, wet the final corner edges so it will adhere to the eggroll.

Please wrap side down and set aside until you’ve finished wrapping all 12 eggrolls.

Using a brush, lightly coat all eggrolls with olive oil.

In an air-fryer, place rolls inside – you can stack some if you have to, but it’s best to give each roll as much ‘air’ around it as possible.

Set at 350 degrees and for 6 minutes. Carefully flip each roll and cook for another 6 minutes.

Serve with Chinese mustard, sweet & sour sauce or pepper jelly! Enjoy!

You may purchase Twin Dragon Wrappers at: Walmart, Albertsons, Shaw’s, Von’s, Stater Bros, Fred Meyer, QFC, Safeway, Associated Stores, Giant Stores, Shop N Shop, Winco, and Price Chopper! If they are not available, just ask your local store to carry them.

Roasted Carrot Soup

Roasted carrot soup is a delicious way to use up extra carrots, or carrots that aren’t super firm anymore. Roasting the carrots helps caramelize the natural sugars and adds a wonderful flavor to this soup.

Useful things you can do while stuck at home

Useful things you can do while stuck at home

Unfortunately, even though many countries have started or will be starting their coronavirus vaccination soon, it looks like we have not seen the last of lockdown. It is likely to be many months before our lives can again return to normal. It is nice to be at home, but after a while, it can get a bit boring, to say the least. A stage that most of us reached quite a while ago. So, today, I thought I would share some ways you can use your time at home more productively and banish the boredom. (more…)

Dr. Brite Non-Toxic Natural Wipes with Isopropyl Alcohol

Dr. Brite Non-Toxic Natural Wipes with Isopropyl Alcohol

Here we are into Fall and sadly it feels like 2020 is going to finish off with a bang, and by that I mean a ridiculously high amount of Covid-19 cases. Many of us have Corona Fatigue, but that doesn’t mean the battle is any less real. As we head into these winter months, I have been stocking (yet again) up on disinfectant products to help keep our surfaces clean. I am loving the Dr. Brite wipes for on-the-go cleaning. Available in three variations: Eucalyptus, Citrus or Un-scented, these wipes are infused with essential oils and are made with medical grade 70% Isopropyl Alcohol. (more…)

5 Signs Your Child is Unhappy at School

5 Signs Your Child is Unhappy at School

As parents, our children’s happiness is one of our biggest concerns. COVID-19 has presented new challenges to many students across the country, as many children are either doing online school or a hybrid version of online and in person school. Many kids are struggling with the new learning format; many children need in person school to learn if they are not good at ‘self-directed’ studying for online learning. As parents, how do we monitor our kids’ well-being? .  (more…)
