I’m so ready to start of summer and am already catching the warm weather vibe with this berry salad with plant based fried chicken on top. This sweet and savory combo is lightened up as Hungry Planet plant-based Chicken Crispy & Fried contains 28% less fat
and 51% less sodium than conventional chicken. Each vegan chicken patty also packs a whopping 14 grams of plant based protein as well!
These 100% plant-based fried chicken cutlets are versatile, perfect for sandwiches, atop salads, or used in your favorite chicken dish. They come pre-cooked, so all I had to do is pan fry it and slice up for my salad!
Berry & Plant Based Chicken Salad
You will Need: (per serving)
- 1-1/2 cups of mixed greens
- 1/2 cup of mixed berries ( I used blueberries, blackberries and raspberries)
- 1 Hungry Planet Chicken cutlet
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- pinch of sald
- 2 tablespoons of feta cheese
How to Prepare
Add olive oil to a pan and turn heat to medium high. Pan fry the Hungry Planet Chicken Crispy & Fried cutlet on each side for about 3-4 minutes until cooked through.
Pull from the pan and let it cool for a few minutes. In the meanwhile, add your greens and berries to a salad bowl or plate.
Slice the hot vegetarian chicken into slices and put on top of the salad.
Whisk the vinegar, salt and oil in a small bowl and drizzle on top of the salad.
Top with crumbled feta cheese (optional – leave out if you’d like to do a vegan salad) and serve!
