Easy Irish Soda Bread
In continuing with our St.Patrick’s Day Irish themed food series, here is a super easy recipe for Irish Soda Bread. You may mix and knead the bread by hand, but if you have a stand up Kitchenaid mixer, I really recommend using it as this recipe will only take you about 10 minutes.  I cranked out 6 loaves the other day under 40 minutes.

Recipe makes two loaves

  •  4 cups all-purpose flour – or try out FeelGoodDough (organic dough mix) – simply remove the yeast bag and this will make two loaves.
  •  3 tablespoons white sugar or Stevia
  •  1 teaspoon baking soda
  •  1 tablespoon baking powder
  •  1/2 teaspoon salt
  •  1/2 cup butter, softened
  •  1 cup buttermilk
  •  1 egg

Loaf glaze

1/4 cup butter, melted
1/4 cup buttermilk

oats – sprinkle a few on top before baking

Directions
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
In a large mixer bowl, mix together flour, sugar, baking soda, baking powder, salt and butter on low. Once ingredients are well mixed, Stir in 1 cup of buttermilk and egg. In a mixer, use bread hook and let dough churn out until it forms a nice round ball. Split dough lump into two and room dough into rounds and place on prepared baking sheet. If you have parchment paper, bake on top of this (easier!)
In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an ‘X’ into the top of the loaf.
Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean (about 45 minutes). Check for doneness after 30 minutes and brush the loaf with the butter mixture while it bakes. Let it go for another 10-14 minutes until edges are browned.
