Halloween Food: Full Moon Squash Over Purple Potato Sky

Having a Halloween themed dinner? This is the perfect fun (& healthy) side to make to accompany your haunted meal! Best of all, it’s super easy!

You will need:

  • About 6-7 Long Purple Potatoes (Mine are Friedas from Sprouts)
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1 Long Necked Butternut Squash – really look for a firm long one as you will be cutting the long neck that has no seeds.
  • Olive oil to bake squash in.
  • Herb salts

How to Prepare

Peel potatoes and boil in salted water until soft. Mash with butter and milk and season with salt and pepper to taste. I used rosemary salts in my version and it complements the slightly sweet taste of the purple potatoes.

Slice the butternut squash long neck into 1/2 inch thick cuts. Leave skin on the outside. Put in a baking tray and drizzle with olive oil and salt. Bake at 375 for 35 minutes.

Serve a baked ‘moon’ over a dollop of purple ‘sky’ potatoes.

I drizzled balsamic reduction sauce over mine to make ‘bats’ and ‘spooky sky’, but you could leave it plain if you wanted to. Be creative!
