This vegetarian gluten-free quiche is not exactly ‘healthy’ as it has tater tots in it (and those are of course fried), but it’s a perfect quick quiche for a vegetarian and gluten-free crowd! The potato bites give this quiche structure and it cooks quickly, so you can have a piping hot quiche ready for unexpected guests within an hour.
You will need:
- 2 full cups of frozen tater tots or potato bites
- 6 eggs
- 2 cups spinach
- diced red pepper (optional)
- salt & pepper to taste
- 3/4 cup shredded cheddar cheese
How to Prepare:
Microwave the potato bites for approximately 50 seconds. Heat the tots just to warm them.
Grease a glass pie dish or quiche pan and scatter the warmed tots.
In a pan heat 2 tablespoons of water and throw in the spinach. Wilt leaves and drain.
In a bowl, mix 6 eggs until smooth.
Distribute diced red pepper and wilted spinach amongst the tater tots.
Pour in the egg mixture.
Top with cheese.
Bake at 375 degrees for 25 minutes. Check to make sure the center is firm. If it’s still wet, put the quiche back in the oven for another 4-5 minutes.
