Lemon Blueberry Quickbread Loaf Recipe

This quickbread loaf mixes up quickly and the lemon is such a delicious tangy sweet addition to blueberries. This is a great way to use up blueberries that may not be firm anymore! Waste not!

You Will Need:

  • 1-1/2 cups flour
  • 1 tsp baking powder
  • 3/4 cup sugar or stevia replacement
  • 2 eggs
  • 1 cup of blueberries
  • 1/3 cup of canola oil
  • juice from 2 small lemons or one very large lemon
  • 1 tablespoon of lemon zest
  • 1 pinch of salt

How To Prepare:

Preheat oven to 350 degrees.

Mix the dry ingredients in one bowl and mix the wet ingredients including fruit and zest in another bowl.

Combine the dry and wet mixes together until lightly covered. Do not over mix or this loaf will be heavy!

Scoop batter into a greased loaf pan.

Bake for 55 minutes – or until inserted toothpick comes out clean.
