My husband always jokes that the apocalypse could happen and we’ll still be eating well (& gourmet!) due to my extensive on-hand collection of shelf-stable essentials for meal prep. Water chesnuts? Yes, I have them. Always.  However, when push comes to shove, here’s what made the cut for items you must have for easy meal prep.  You don’t need to make prep, cut, chop or blend every ingredient by hand. Today’s healthy natural products offer smart shortcuts for maximum flavor. Keep these pantry staples on hand for quick meal prep:

  • Canned beans (white, black, kidney, garbanzo)
  • Coconut milk
  • Canned tomatoes (whole, chopped, pureed)
  • Bottled red bell peppers
  • Whole-grain pasta
  • Canned green chilies
  • Nuts and dried fruits
  • Rice &/or Grains (Any White, Brown Rice + Barley, Quinoa & Couscous)
  • Flavored vinegars and oils
  • Vegetable (or chicken broth)
  • Spices – Especially Chili Powder & Cumin!
