Boosting immunity going into the Fall season, especially THIS Fall season, is now more important than ever! Getting sleep, washing hands and staying outdoors are great ways to stay healthy, but nutrition also plays an important role. I’m also all about healthy meals I can pre-prep to save time, especially with shorter days ahead and everyone in my household on a different schedule. My favorite make ahead breakfast is overnight oats.! It’s easy and such a delicious way to start the day.
Oats are high in soluble fiber beta-glucan, and they help reduce cholesterol and blood sugar levels. To give my overnight oats superimmunity boosting power, I add in Feel Good Organic Superfoods Elderberry powder.
Elderberry Powder is one of the most commonly used medicinal plants in the world, and people have been using elderberry for hundreds of years. Some experts recommend elderberry to help prevent and ease cold and flu symptoms*. Elderberries are known to be packed full of antioxidants, minerals and vitamins. With Feel Good Elderberry powder, I simply add a heaping tablespoon to my oat mixture. The powder adds a slight berry flavor and makes the oats a pretty light purple color (kids will dig this, too).
You Will Need:
- 1 cup almond milk (or oat milk or dairy milk)
- 1 heaping tablespoon FeedGood Organic Superfood Elderberry Powder
- 1/2 cup of rolled oats
- 1 tablespoon chia seeds (optional) If you omit, add an additional 2 tablespoon of oats
- sweetener of your choice – You may use honey, Stevia, sugar – I used a teaspoon of powdered monk fruit!
- clear mason jars (preferred for cuteness factor), but ANY glassware will suffice!
Idea Toppings:
- granola
- fresh berries
- dried coconut
- nuts
How to Prepare:
Warm one cup of almond milk in the microwave for 30 seconds.
The Feel Good Elderberry powder will mix into the plant-based milk if it’s slightly warm vs. ice cold.
Do not overheat the milk! To maintain the superimmunity boosting attributes of elderberry, it should never be heated over 180 degrees. Stir in elderberry powder until milk has a purple-pink hue. I love that Feel Good Organic Superfoods Elderberry Powder is Non-GMO, Gluten Free and Vegan Friendly
Mix in oats and chia seeds.
Cover and put in the fridge overnight. OR, if you are making this in the morning for an afternoon snack, the oats need at least 3 hours in the fridge to set up.
When you’re ready to enjoy your elderberry overnight oats, simply take it out of the refridgerator and top with granola and fresh berries.
Overnight oats are SO easy to make and are a delicious way to start the morning. I love using seasonal fresh berries, but mixing in frozen fruit or berries in the winter is just as tasty!
Mom Tip: Let kids add their own toppings and mix-ins. When kids are part of their meal creations, they are often more vested and healthy dietary habits are being positively reenforced!
