Last summer, my Mom had a consultation at the Mayo Clinic and within hours of her visit, she was checked into the hospital and scheduled for an emergency heart valve replacement. I flew out to see her, as it was truly touch and go. Mom struggled for breath, as congestive heart failure causes the lungs to ‘flood’ with fluid. She stoically reflected that she should have made better lifestyle choices in life.  Her food choices were due to convenience,  not nutritional value and exercise was a chore, not an enjoyment. I’ve led a healthy lifestyle, but seeing her there desperate for a second chance, made me realize that EVERY DAY we have a chance to do better and improve our heart health. Thankfully Mom was given that second chance with a successful surgery and is now feeling great. She’s also making better food choices, like having oatmeal for breakfast instead of a daily pastry (or two).  (more…)

Soundproofing your home with caulk

Soundproofing your home with caulk

Now that we’re all home during the day with Covid-19, we are HEARING each other. A LOT. We’re hearing our teens play video games non-stop, our spouse on boisterous Zoom calls or we’re hearing our neighbors play Bon Jovi on repeat. Either way, here are…

Daytripping at a San Diego Monastery

Daytripping at a San Diego Monastery

Two weeks ago, my husband and I went to a Monster Truck event – which was fun and I’m enjoying getting out of my bubble as often as possible. This weekend we decided to ventured out to Dulzura, CA (about 30 miles outside of San Diego) to visit the Madre Grande Monastery.  If this Coronavirus thing gets out of control, it would be an excellent place to bug out, man… ️ (more…)

Vegan Scalloped Potatoes

Is it possible to make cheese-free scalloped potatoes? That’s what I set out to discover! Full disclosure: I like cheese, but my daughter is not doing well with lactose lately, so I’m modifying recipes to see what I can cut out.

Mama, Don’t Let Your Babies Grow Up to Cowboys…

Remember this old Western Tune?

Mamas’ don’t let your babies grow up to be cowboys
Don’t let ’em pick guitars or drive them old trucks
Let ’em be doctors and lawyers and such

Why intergenerational relationships help families

Why intergenerational relationships help families

The older members of our society have often played a huge part in driving our country’s progress over the years and even defended it and its people’s freedom. However, as they age, many often find themselves fighting for veterans benefits, feeling undervalued in society as…

Heart Healthy Vegetarian Tamale Pie

Heart Healthy Vegetarian Tamale Pie

February is Heart Health Month, so my family and I are enjoying lightened up recipes of traditional classics. Heart disease causes 1 in every 4 deaths in the United States, so I’m constantly tweaking my recipes to make them heart healthy, but without sacrificing flavor.

Cauliflower Crust Pizza with Spinach, Olive, Feta and Pine Nuts

Cauliflower Crust Pizza with Spinach, Olive, Feta and Pine Nuts

It’s National Pizza Day on February 9th, so what better way to celebrate than with a homemade pizza! I’ve been making pizza from scratch for years, but recently have had to mix up my game plan. We had a pizza party for my daughter as I thought it would be an easy way to feed a bunch of teens, and everyone could customize their toppings. What I did NOT anticipate was the level of food allergies and food preferences! (more…)
