I love avocado on just about anything, but my Ultimate Avocado Toast recipe has to be my favorite. 

It’s easy to make, delicious and nutrient rich in oleic acid (from the avocado), protein (from the egg), and vitamin C from the tangy lime juice infused tomatoes. It’s also a tasty breakfast or satisfying lunch on the go.

However, getting lovely smooshed chunky avocado is not always an easy task!

At a recent family gathering, I decided to make a taco bar for dinner. My cousin was coming into town and offered to make something, so I suggested avocado dip, as I didn’t want her to have to do much. When she arrived, she looked frazzled and said she was worried about the avocados. She had purchased avocados the WEEK before and had been trying to ripen them at the right pace so she could make fresh avocado dip! After telling me about the lengthy ripening and avocado babysitting schedule, I felt REALLY bad about asking her to make it! Thankfully, stressing out about ripening (or overripening) avocados is now a thing of the past with WHOLLY® SIMPLY AVOCADO™.

You Will Need

How To Prepare

Chop heirloom tomatoes in half and toss with juice from half a lime.


Dice enough fresh cilantro to make 1 tablespoon per serving.

Toast wheat bread on medium. The bread should be firm, but not burnt.

Slather toast with SIMPLY AVOCADO™ (any variety). It’s up to you on how much to use, but I prefer a nice thick layer and love the little chunks of yummy avocado!

Do a quick egg poach per the following instructions. You could also pan fry an egg and it will be delicious, but there is something so decadent about having a warm soft egg mixed in with chunky avocado. Poaching is very easy to do and only takes 2-3 minutes!

Place the poached egg on top of the toast. Serve with the lime tomatoes and sprinkle with diced cilantro. I love adding a bit of salt and pepper to the egg.

Take a knife and cut open the poached egg. Spread the soft egg around on top of the creamy flavorful SIMPLY AVOCADO™.

Enjoy! I like to sneak my sumptuous snack outside by my pool, so no one in my household will try to poach my poached egg avocado toast!

Ultimate Avocado Toast

Ingredients

  • 1 8 oz. tub of SIMPLY AVOCADO™ Sea Salt or SIMPLY AVOCADO™ Garlic Herb (Both are delicious!)
  • 1/2 cup sliced heirloom cherry tomatoes (per serving)
  • fresh cilantro (1 tablespoon diced per serving)
  • hearty wheat bread
  • one egg per slice of bread (or per serving)
  • fresh limes

Instructions

  1. Chop heirloom tomatoes in half and toss with juice from half a lime.
  2. Dice enough fresh cilantro to make 1 tablespoon per serving.
  3. Toast wheat bread on medium. The bread should be firm, but not burnt.
  4. Slather toast with SIMPLY AVOCADO™ (any variety). It's up to you on how much to use. I prefer a nice thick layer and love the little chunks inside!
  5. In a small pot, boil water until it's a medium roll.
  6. Take a ladle and crack an egg into it.
  7. Carefully lower egg into the hot water.
  8. Set timer for 2-3 minutes (look at yolk to see if you'd like it runnier or firmer)
  9. Take a slotted spoon and carefully lift out.
  10. Tap off water and lay on top of avocado toast.
  11. Serve with the lime tomatoes and sprinkle with diced cilantro. I love adding a bit of salt and pepper to the egg.
  12. Take a knife and cut open the poached egg. Spread the soft egg around on top of the creamy flavorful SIMPLY AVOCADO™.
  13. Enjoy!
