I love making homemade granola because it makes my home smell amazing and truthfully it just tastes better than anything I can buy in the store! Store granolas can often be hard and loaded with sugar. My granola used 1/2 cup of honey, but on 4-5 cups of oats, so you get a LOT of granola for the honey use! It’s not overly sweet, but is fragrant and delicious with hints of vanilla and cinnamon with almonds providing a healthy crunch.
You will need:
- 4-5 cups of rolled oats
- 1/2 cup honey
- 3/4 cup shredded coconut
- 1/2 cup of coconut oil
- 1 tsp vanilla
- 2 tablespoons chia seeds
- 1 cup raw whole almonds, chopped
- 1/2 cup raw sunflower seeds (optional)
- 1/2 tablespoon cinnamon
- pinch of salt
How To Prepare:
Preheat oven to 300 degrees.
In a large bowl, add oats, nuts, chia seeds, In another bowl, melt coconut and add warm honey. Mix. Add vanilla and mix again.
Add wet ingredients to dry and mix in a pinch of salt with the cinnamon. Oats should all be lightly coated.
Spread oats out on parchment paper on a baking tray. Bake for 20 minutes.
Let oats cool and then enjoy immediately, or store in an airtight container to enjoy later. Serve with Greek yogurt and fruit!
