Tangy Vegetable Tagine with Preserved Lemons

As winter winds down and lemon trees are dropping their bounty, I have been preserving lemons with salt to use in soups, bakes, stews and salad dressings. As a fan of one-pot cooking, my Tangy Vegetable Tagine with Preserved Lemons is an easy, yet impressive dish to prepare for dinner guests. It may be enjoyed alone, or served over your favorite grain. The flavorful tagine flavors range from spicy, sweet to zesty, so it’s important to serve a delicious beverage that complements the flavors. SANPELLEGRINO Momenti is a great alternative to soft drinks with a wonderful blend of real juice and fine, carbonated water. Many of my friends don’t drink soda, yet enjoy carbonated waters. My guests will love the SANPELLEGRINO Momenti beverages as they are super stylish! In fact, they are so attractive, that they may be served as is in the can, or poured into a frosty glass. My friends will also be thrilled that these sparkling drinks are also 35 calories per can! These drinks are fancy AND guilt free!

Tangy Vegetable Tagine with Preserved Lemons

I love using my own preserved lemons in this recipe, but you may also buy preserved lemons, or simply use 2-3 teaspoons of lemon zest instead.

You Will Need

  • 2 cups celery chopped
  • 1 small onion diced
  • 2-1/2 cups cubed butternut squash
  • 28 oz canned crushed tomatoes
  • 14 oz water
  • 1 tsp salt
  • 1 tsp coriander
  • 1 tsp red chili pepper
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 2-3 preserved lemon chunks – rinsed and diced (make sure there are no seeds)
  • 3 carrots chopped
  • 1 15.5 oz can garbanzo beans
  • 1 cup diced parsley
  • 2 tbsp avocado oil or other vegetable oil
  • Serving suggestion: You may enjoy this tagine plain, or serve over rice, couscous or quinoa.

 

How to Prepare

In a large heavy pot, heat avocado oil over medium heat and add onions and celery. Saute for 5 minutes, stirring regularly with a wooden spoon.

Add all of the chopped veggies and garbanzo beans.

Add in the salt and spices. Toss to combine.

Keeping the heat on medium, add in the can of crushed tomatoes and water and cook for 5 minutes.

Stir in the diced preserved lemon.

Reduce heat to low, cover pot and simmer for another 20 minutes or so until all veggies are tender.

Sprinkle in parsley about 5 minutes prior to serving. The parsley will wilt and get darker. Save some parsley as a garnish topper for serving (optional)

Serve hot veggie tagine over your favorite grain, rice or serve plain.
