Zucchini Fritters are not only super easy to make, but they get a big *Oohh Ahhh* response. I’m already seeing zucchini plants starting to sprawl out around my neighborhood, which only means we’ll all be up to our eyeballs in the green vege soon!
Mix the ingredients together in minutes and fry them up when ready to serve.
Zucchini Fritters Recipe – Makes 5 large fritters
You Will Need:
- 2 grated zucchinis
- two eggs
- 1/4 c diced green onions
- 2 tablespoons good parmesan
- 1/2 c. flour of your choice
- salt, red pepper flakes & lots of black pepper
- 2-3 tablespoons of canola or corn oil
How To Prepare:
Mix all of the ingredients together in a bowl until well incorporated.
Heat canola oil in a medium size pan and lightly fry on each side for 3-4 minutes.
Serve with avocado, sour cream and salsa – or whatever else sounds delicious to you!
