Ingredients:
12 corn tortillas
16 oz enchilada sauce
2 cups shredded Mexican cheese blend
2 cups corn
1 bag Quorn Vegetarian Chicken or similar (could also use Vegan Crumbles)
1 can of black beans, drained and rinsed
Optional: Serve with sour cream, cilantro, tomatoes and sweet & spicy Jalapeno slices
Instructions:
Preheat your oven to 400 degrees Fahrenheit.
Grease the Hestan pan with a high-heat oil like avocado or grapeseed oil.
Layer the ingredients starting with a pad of 4 overlapping tortillas.
Add corn, black beans, Quorn or vegan crumbles, enchilada sauce, and cheese.
Repeat the layers, making sure to reserve enough enchilada sauce and cheese for the top.
Bake at 400 degrees for 45 minutes or until the top is golden brown.
Enjoy your Tortilla Bake optionally with sour cream, cilantro, tomatoes and sweet & spicy Jalapeno slices.
