This stir fry noodle salad is easy, filling and super tasty! Using the Ginger Soy Yakisoba Stir-Fry Noodles, I created this delicious cabbage slaw salad that is healthy and very flavorful. The Yakisoba noodles come with a Ginger Soy spice packet, so all of the flavor is there to make a fast lunch of dinner. Here’s my Stir-Fry entry for the #fortunerecipechallenge.
You Will Need:
Prep time 15 minutes – Serves 3-4
- 1/4 head of cabbage
- 1/2 tablespoon sesame oil
- 1 package of Soy Ginger Yakisoba Stir-Fry Noodles
- 1/2 bell pepper (red, orange or yellow)
- 1/2 cup of water
- 1/2 tablespoon sesame seeds
- 1/4 cup cilantro (optional)
- diced red chili pepper (0ptional)
How to Prepare:
Cut off about 1/4 of a large head of cabbage, removing the outside layer. Wash, dry and slice into thin strips.
Add cabbage to a large mixing bowl. Slice bell pepper into thin strips and add to mixing bowl.
Optional – dice up 1/2 cup of fresh cilantro and add to mixing bowl.
In a medium sauce pan, on medium-high heat, add 1/2 tablespoon of sesame oil and add in the Yakisoba Stir-Fry Noodles. Toss in the oil and heat for about 1-2 minutes.
Pour in 1/2 cup of water. This is more than the package states, but we are making it a bit saucier as this will serve as the dressing for the noodle salad.
Mix in the Soy Ginger packet from the Yakisoba Stir-Fry Noodle packet.
Let noodles cook for 3 minutes while stirring. Use the edge of a wooden spatula to cut noodles into smaller pieces in the pan.
Toss hot noodles and any liquid in the pan with the cabbage mix in the bowl. Sprinkle in 1/2 tablespoon of sesame seeds and serve!
The warm noodles will gently soften the cabbage making it extra delicious! Optional – If you like heat, sprinkle on some diced red chili pepper on top of your salad.
