Pigeon peas are a bit gentler on the stomach that black beans or pinto beans, so if you’re craving a comfort soup, this recipe is an excellent choice!

Vegetarian Pigeon Pea Soup

  • 2 cups of pigeon peas
  • 8 cups vegetable broth
  • 2 cups chopped greens (collard, chard or spinach)
  • 2 large carrots, peeled and cut into thin chunks
  • 2 tsp garlic powder
  • 1/2 tsp black pepper
  • salt to taste
  • 2 tablespoons olive oil
  • hot sauce to taste

How to Prepare

Wash and rinse pigeon peas and look for any foreign objects like little rocks. It’s rare to find one, but it does happen.

In a large stock pot, add peas, broth, olive oil and spices to a medium boil.

Reduce heat and simmer for 30 minutes, occasionally stirring and adding more water if it gets too thick.  Add carrots and greens in and simmer on low for an additional 8 minutes and serve with hot sauce!
