If you follow along with my kitchen adventures, you know how much I value cookware that works hard, cleans up in seconds, and looks beautiful enough to bring straight to the dining table. When Our Place announced their new Ceramic Nonstick Dual Handle Always Pan, I couldn’t wait to get it on the stove. Their pans are known for being made for heavy use and made to last.
I decided to put it to the ultimate test with a classic autumn comfort dish: Traditional German-Style Sweet & Sour Braised Red Cabbage (Rotkohl).
Cabbage can be tricky—you need ample room to sauté a mountain of fresh shreds, steady gentle heat to simmer the spices into sweet-and-tangy perfection, and a reliable lid that locks in steam without letting all the braising juices evaporate.
Here is my honest breakdown of the features, how it performed, and the easy recipe so you can make it at home.
What Sets the Dual Handle Always Pan Apart?
The original Always Pan is legendary for everyday quick meals, but this new double-handled design solves some of the most common cookware dilemmas:
1. Massive 13-Inch Surface (4.25 qt Capacity)
Ever tried braising greens, wilting a mountain of cabbage, or searing four cutlets at once, only to have everything steam because the pan was too crowded? With a generous 13-inch cooking diameter and 4.25-quart volume, this pan gives your ingredients space to breathe, caramelize, and brown properly.
2. Dual Short Handles: Stove-to-Oven-to-Table
Instead of a long stick handle sticking out awkwardly across your stove or bumping into your oven door, this version features two compact, easy-to-grab side handles. It fits seamlessly into standard ovens without awkward diagonal angling and transitions straight to the centerpiece of your dining table. Seriously this design is genius!
3. High-Visibility Glass Lid
Unlike solid lids where you have to constantly lift the cover (losing crucial heat and moisture in the process), this pan comes with a clear tempered glass lid. You can easily keep an eye on your simmer, braise, or bubbling sauce at a glance.
4. Non-Toxic Thermakind® Ceramic Nonstick
Health-conscious cooking starts with safe cookware. The interior is coated with Our Place’s proprietary Thermakind® ceramic nonstick, derived primarily from sand, water, and alcohol. It is completely free from:
PFAS (“Forever Chemicals”)
PTFE & PFOA
Lead & Cadmium
Plus, the interior is 100% rivet-free, meaning no stuck-on grease or crust around handle screws when cleaning up.

In Action: Braised German-Style Red Cabbage (Rotkohl)
Braised red cabbage is one of my favorite side dishes—it pairs wonderfully with roasted pork tenderloin, grilled sausages, or alongside a hearty roasted root vegetable platter.
Ingredients:
1 medium head red cabbage (about 2 to 2.5 lbs), cored and thinly shredded
1 medium yellow onion, diced
2 crisp sweet-tart apples (such as Honeycrisp or Gala), peeled, cored, and diced – or you may use pears! They aren’t as tart, but they add a nice sweet firm balance.
2 tbsp unsalted butter or neutral oil
4 tbsp apple cider vinegar (plus an extra splash at the end)
3 tbsp pure maple syrup, brown sugar, or coconut sugar – add more if you desire more sweetness.
1/2 cup 100% apple cider or filtered water
1/4 tsp ground cloves
1 tsp fine sea salt (or mineral salt)
1/4 tsp freshly ground black pepper
Step-by-Step Method:
Sauté the aromatics: Place your Dual Handle Always Pan on medium heat. Melt the butter (or warm the oil). Add the diced onion and sauté for 4–5 minutes until soft and translucent.
Add the apples/or pears & cabbage: Stir in the diced apples and let them soften for 2 minutes. Add the shredded red cabbage in batches. Thanks to the wide 13-inch rim, the entire head fits with plenty of room to toss and coat without spilling over the sides.
Add the braising liquid: Pour in the apple cider vinegar, apple cider (or water), maple syrup, salt, black pepper, cloves, and bay leaf. Toss everything together using the included beechwood spoon. The acid from the vinegar will instantly brighten the purple hue of the cabbage!
Cover and simmer: Bring the liquid to a gentle simmer. Cover with the glass lid, turn the heat down to low, and let it braise gently for 40 to 45 minutes, stirring occasionally. You can check the liquid level right through the glass without lifting the lid.
Finish & Serve: Once the cabbage is tender and silky, remove the lid. If there is still excess liquid in the bottom, turn the heat up slightly and let it reduce for 3–4 minutes until glazed and glossy. Discard the bay leaf and whole cloves. Taste and adjust with a pinch more salt or an extra splash of apple cider vinegar for brightness.
Table ready: Using oven mitts on the dual handles, carry the pan straight to the table for family-style serving!
Cleaning & Care Tips
To keep your Always Pan Thermakind® ceramic coating performing like new for years:
Heat setting: Stick to low to medium heat. The cast aluminum core heats quickly and evenly, so screaming high heat isn’t necessary.
Utensils: Use wooden, silicone, or nylon tools (like the included beechwood spoon). Avoid metal tongs, forks, or whisks.
Cool down first: Always allow the pan to cool completely before washing. Rapid temperature changes can damage ceramic nonstick coatings.
Hand wash: Warm soapy water and a soft sponge are all you need—the rivet-free surface rinses clean in under 30 seconds.
Final Verdict
If you’ve felt limited by deep sauté pans with cumbersome handles or standard nonsticks that don’t have enough surface area for family-style cooking, the Dual Handle Always Pan is a fantastic, versatile workhorse. It doubles as a wide skillet, a braiser, an oven roaster, and a stunning serving dish all in one. I have used the Our Place pans for years and they are by my very favorite and the ones I reach for when I get cooking!
