Ingredients

  • 6 large eggs, steamed or boiled to hard, chilled, and peeled
  • 2 tbsp crème fraîche (or full-fat sour cream in a pinch)
  • 2 tbsp high-quality neutral mayonnaise (such as Kewpie or standard Duke’s/Hellmann’s)
  • 1/2 tsp fresh lemon juice (strained of pulp)
  • 1/8 tsp finely ground white pepper (avoids black specks and harsh heat)
  • Pinch of fine sea salt (use conservatively; caviar contributes natural brine)
  • 1–2 oz (30–50 g) premium caviar
  • 1 tbsp fresh chives, finely minced (for garnish)

Step-by-Step Instructions

  1. Halve and prep the eggs: Slice hard-boiled eggs lengthwise with a sharp, thin knife (wiping the blade between cuts for clean edges). Gently pop the yolks into a medium bowl and place the white halves on a serving platter.
  2. Sieve the yolks: For the silkiest texture that won’t compete with the pop of caviar, push the yolks through a fine-mesh sieve with the back of a spoon into a clean bowl.
  3. Whip the filling: Fold in the crème fraîche, mayonnaise, lemon juice, and white pepper. Whisk or fold until completely smooth, light, and glossy. Taste, and only add a small pinch of sea salt if needed.
  4. Pipe cleanly: Transfer the filling into a pastry bag fitted with a wide round tip or a plain open corner cut from a zip-top bag. Pipe the filling evenly into the egg white wells, leaving a slight indentation or flat top to hold the caviar.
  5. Crown with caviar: Just before serving, spoon about 1/2 to 1 teaspoon of chilled caviar atop each egg. Use a mother-of-pearl, bone, or non-reactive plastic spoon (avoid stainless steel or silver, which impart a metallic taste).
  6. Finish: Scatter minced chives delicately around the roe. Serve immediately chilled.

Tips for Serving

  • Chill everything: Keep both the piped whites and the caviar well-chilled until minutes before serving.
  • Leveling the whites: If the egg halves wobble on your serving tray, slice a paper-thin sliver off the bottom curved underside of each white half so they sit completely flat.
  • Make-ahead window: You can whip the yolk mixture and prep the egg whites up to 12 hours ahead. Store whites sealed under a damp paper towel and keep the filling in the piping bag. Pipe and top with caviar just before your guests arrive.
