I asked my daughter what she wanted for her 8th-grade promotion dinner and said a ‘gourmet pizza bar’. Wow, fancy. My Pinterest loving kiddo said she saw a cauliflower pizza crust that was flour-free and would also like to try that. Cauliflower crusts have been hot for awhile now, and you can actually buy them premade and ready to go at Trader Joe’s. However, we wanted to try our own version – thankfully these came out really tasty and they were also easy to make!

You will Need:
- Riced Cauliflower (you can buy pre-diced cauliflower at Trader Joe’s or just take a head of Cauliflower and pulse in food processor until fine).
- 2 eggs
- 1/4 cup parmesan
- 1/2 cup shredded mozzarella
- 1/2 tablespoon of Italian seasoning
- 1 teaspoon salt
How to Prepare:
Turn oven to 375 degrees.
Take riced cauliflower and put in a glass bowl. Add 1/4 cup water and put in microwave for 1 1/2 minutes. This will ‘steam’ the cauliflower pieces slightly.
Let cool and mix in two eggs, cheeses, salt, and seasoning.
On a lightly oiled parchment paper, spread out circles about 1/4″ thick.
Bake for 20 minutes. Let crusts cool and then your guests put their own toppings on!
I usually add mozzarella on top of everything to help secure all the toppings.
Bake for another 10 minutes and you’re set!
Because the crusts are softer than bread crusts, I recommend serving on a pretty plate with knife and fork.

The crusts are also a snap to make in advance. Separate out with parchment paper and store in Tupperware or a plastic bag. Make sure they won’t get ‘wet’ or moist from condensation, so cool them completely before storing.
This is such a great way to lighten up pizza! I love to add a bit of fresh arugula on top with balsamic reduction sauce after I pulled out the baked pizzas.
