These low-fat air-fryer Ginger Shrimp Eggrolls are tasty and a better for your option on Game Day!
Using Twin Dragon Eggroll wrappers by JSL Foods, I tuck in the shrimp and cabbage filling and then have tasty eggrolls ready to go in 12 minutes!

In a large sauce pan, add 1-2 tablespoons vegetable oil and heat on medium high. Add in garlic, ginger, onion and bell pepper and cabbage. After cabbage has softened, add in shrimp.
Stir in white pepper, salt and soy sauce. Cabbage should be soft and cooked down (about 8 minutes cooking time). Shrimp may not be 100% cooked, but that’s ok because it’s still going to cook more in the air-fryer.
Turn off heat and let mixture sit for a few minutes while you prep the eggroll making surface.
On a large clean cutting board or prep surface, lay flat one egg-roll wrapper.

Please 2-3 spoonfuls of shrimp cabbage mixture on wrapper in the center and across. Roll wrapper around mixture and then tuck in each side. Finish rolling and using water, wet the final corner edges so it will adhere to the eggroll.

Please wrap side down and set aside until you’ve finished wrapping all 12 eggrolls.

Using a brush, lightly coat all eggrolls with olive oil.
In an air-fryer, place rolls inside – you can stack some if you have to, but it’s best to give each roll as much ‘air’ around it as possible.

Set at 350 degrees and for 6 minutes. Carefully flip each roll and cook for another 6 minutes.
Serve with Chinese mustard, sweet & sour sauce or pepper jelly! Enjoy!
You may purchase Twin Dragon Wrappers at: Walmart, Albertsons, Shaw’s, Von’s, Stater Bros, Fred Meyer, QFC, Safeway, Associated Stores, Giant Stores, Shop N Shop, Winco, and Price Chopper! If they are not available, just ask your local store to carry them.
