My Broccoli Barley Soup with creamy grassfed milk and cheese is a delicious soup to enjoy on a cold crisp night. It’s creamy comfort food, but chock full of vegetable goodness as well.

Broccoli Barley Soup with Creamy Grassfed Milk
You Will Need:
- 1 Onion Chopped
- 3 Large crowns Broccoli Chopped
- 2 Carrots Peeled and Chopped
- 1 Cup of Barley (2 cups cooked)
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 1 Tablespoon Fresh Thyme
- 2-3 Cups Vegetable Stock
- 2 Cups of Horizon Organic Grassfed Whole Milk or 2% Milk
- 1 Tablespoon Vegetable Oil
- Horizon Organic Shredded Mexican Cheese (as a topping)
How to Prepare:
In a stock pot, cover broccoli and carrots with water and bring to a boil. Cook until tender. In a pan, saute’ onions in the vegetable oil until translucent.
Add all cooked vegetables to a food processor, salt, pepper, 1 tablespoon fresh thyme and 2-3 cups of vegetable stock. Blend until smooth.
Pour mixture into soup stock pot and simmer on low. Pour 2 cups of milk to the blended broccoli soup mixture and stir occasionally for 10 minutes.
I used a rice maker to cook my one cup of dry barley (should yield about 2 cups cooked), however, you may cook your barley with 2 cups water in a stock pot on low heat until tender. Stir in two cups of cooked barley to soup prior to serving.
Sprinkle with shredded Horizon Organic shredded cheese as a topping and serve hot. The creamy cheese will slowly melt into the soup.
Season additionally with salt and pepper if needed.
