Not only is this ridiculously easy to make, but if you have kids on Instagram, all they see are beautiful chia pudding combos so you’re not going to have to twist their arms to try it! Ha..social networking peer pressure for nutritional good!
After you make the basic pudding, pour it in a clear glass container and top with fruit of your choice to make extra yummy and colorful.
- 2 cups coconut milk (homemade or natural)
- ½ cup Chia Seeds
- ½ teaspoon vanilla extract
- 3 packets of Stevia or you can use a sweetener of your choice.
Mix all of the ingredients in a big bowl and cover. Put in the fridge for at least 4 hours, or overnight.
The chia will plump up in this time frame and become a smooth tasty pudding that is gluten-free, high in omega-fatty acids, calcium and protein. Shhh..don’t tell the kids it’s so healthy.
Note: The bright pink in my fruit chia bowl is Pataya or Dragon Fruit! I found frozen packets of Pitaya at my local grocery store in the frozen fruit/smoothie section. A little goes a long way – blend a little with banana and it will be a fun bright pink!
