Truffle Pasta Paired with Fresh Garden Herbs

I am completely in love Mercato di Bellina Truffle pasta! Unlike other pastas, this pasta actually tastes like real truffle and I can even see the brown little mushroom flecks in the noodles! This 100% Italian pasta is handmade in small batches using a traditional family recipe, so no wonder it’s so delicious.

The products of the ancient Morelli pasta factory (circa 1860) are special in that they have a secret ingredient not found in most common pastas. The wheat germ, which is the heart of the grain, contains a high ratio of vitamins such as A, D and E, as well as a vegetable protein.

The bulk of the pastas produced in the U.S. have this protein removed in order to make pasta more shelf staple. However, the Morelli pasta magicians are able to reincorporate the wheat germ into semolina and each serving has a whopping 8 grams of protein! Then they SLOW dry the pasta in storage rooms for no less than 36 hours. Such a labor of love!

My absolute favorite flavor in pasta is truffle, so I was super excited to make a batch of the Morelli Pasta with Truffle for myself. Did you know truffle pairs really well with fresh green herbs such as parsley, thyme, oregano and rosemary? Using fresh herbs from my garden, garlic and Italian Extra Virgin Olive Oil, I created a simple yet gourmet plate of past.

Garden Herb Truffle Pasta

Serves 4 – Prep Time 20 minutes

You will need:

  • 1 Package of Morelli Truffle Pasta
  • 1/4-1/3 cup of freshly washed and diced herbs such as parsley, oregano, thyme and rosemary. Remove woody parts.
  • 4 tablespoons olive oil
  • 4-5 cloves of garlic
  • salt and pepper to taste
  • parmesan cheese (3-4 tablespoons)

How to Prepare:

Boil the pasta in salted water til the pasta is ‘al dente’ and drain.

Drizzle a little olive oil on the noodles.

In a separate saute’ pan, heat 3 tablespoons of EVOO on medium and add in the fresh garlic and herbs.

Saute’ the aromatics for no more than 2-3 minutes to slightly soften the garlic. Turn off heat and then add the pasta back in and coat thoroughly. Drizzle a little more EVOO on and salt and pepper to taste.

Serve with freshly grated parmesan cheese.

This is such a tasty & satisfying meal that can be prepared quickly. Great for a quick lunch or for friends coming over to enjoy with a glass of wine.
