Gluten-Free Banana Bread Using Almond Flour Recipe

As the stock at Grocery Outlet constantly changes, I never know what I’ll find. It’s like a Naturals Food Treasure Hunt! On my most recent trip, I found some Anthony’s almond flour that typically costs between $15-16, but I was able to snag it for only $9.99! White Chia Seeds were only $1.99 (normally $4.99)! I scored tons of other snacks and ingredients as well at a huge discount.

One of my personal Healthy Lifestyle goals for 2018 is to try to eat less processed flour. As the Almond Flour was such a great find, I decided to make my Gluten-Free Almond Banana bread, with the new addition of White Chia Seeds! This flour-free recipe is very high in protein, high in fiber, omega fatty acids and low in sugar as the only sweetener is 1/4 cup of honey and three ripe bananas.

You Will Need:

Gluten-Free Almond Chia Bread Recipe

  • cooking spray
  • 3 eggs, beaten
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons chia seed
  • 3 bananas, mashed
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt

How to Make:

Mix wet ingredients – mashed bananas, eggs, vanilla, vinegar, coconut oil, and honey. The coconut oil and honey are easier to add if you microwave each for 15 seconds before adding.

Mix dry ingredients together in a bowl – almond flour, chia, baking powder, cinnamon, and salt.

Combine both wet and dry ingredients together and pour into greased baking loaf pan.

Bake at 300 degrees (yep! lower temperature than normal!) for 55-65 minutes.

Let cool for at least 20 minutes before slicing and serving. Enjoy!
