I just used the Chelan Fresh ‘Lucy Apples’ in my salad for lunch and they were so delicious! Lucy Apples have a naturally occurring red flesh inside, and are a cross between an old European variety called the Arlie Red apple and the popular Honeycrisp apple. Super fun for the holidays! The tart and sweet flavor paired really well with this smashed Brussel sprout & pecan salad with a homemade garlic thyme dressing.
The Lucy Apples come in two varieties – the Lucy Rose, which has a red skin outside, and the Lucy Glo which has a yellowish skin. Both are deliciously tart and sweet with red flesh running through the apple inside.
These apples are fun in salads (like my recipe below) or a great way to dress up a charcuterie board board. Kids will think they are fun as well!
Red Apple & Brussel Sprout Salad Recipe
Total Prep Time: 40 minutes
You Will Need:
(serves 2)
1 Lucy Apple (either Glo or Rose) – washed and sliced up into square chunks.
4 cups of mixed greens (butter, arugula, spinach)
1/4 cup pecans
8-10 Brussel sprouts
Olive oil to bake sprouts in
Dressing
1/2 cup yogurt or non-fat sourcream
1/2 cup white wine vinegar
1 smashed garlic clove
1/2 tablespoon washed diced fresh thyme leaves
pinch of salt
How to Prepare:
Preheat oven to 380 degrees.
Wash and trim sprouts and par boil in a pot for about 5 minutes. Sprouts should be slightly cooked through. Drain and let cool for 5 minutes.
Using a glass or mug, push down on each sprout (on a cutting board) and put into a bowl. Toss with a little olive oil and salt and bake for 20 minutes.
In a small bowl, combine ingredients for the dressing and stir well. This dressing will separate out if left out, so make sure to mix it thoroughly before tossing with salad greens.
In a large salad bowl, toss lettuce and dressing together. You may mix the pecans in now, or save until plating.
Take warm sprouts and cut in half if they are large. If they are small, leave as is.
Plate the salad into pretty salad bowls and add brussels, pecans and apples on top in any manner you’d like.
I used a little balsamic reduction sauce JUST on the brussels, but it’s not needed at all!
