No Bake Chia Peanut Butter Energy Balls

No Bake Chia Peanut Butter Energy Balls

These high soluble fiber, low sugar peanut butter balls are a great healthy snack for busy families on the go.  I put the oats in a food processor to make them almost into an oat flour and then add chia seeds for a fun crunch rich in Omega-3s. You may use any peanut butter, but I did enjoy using the creatively flavored PB Crave peanut butter as they offer many great low sugar options. For this batch I used the Coconut Milk Chocolate PB Crave which only has 4 grams of sugar per 2 tablespoon serving. Overall, the finished Peanut Butter Energy Balls only have about 4 grams of sugar per ball.

You will need:

  • 1 cup of rolled oats
  • 1 tablespoon honey
  • 1/3 cup peanut butter ( I used the PB Crave Coconut Milk Chocolate which is very low sugar!)
  • 1 tablespoon chia seeds
  • 1 tsp vanilla extract
  • 2 packets of Stevia
  • dried coconut flakes (unsweetened) to sprinkle or roll in

How to Make:

Pulse rolled oats in food processor until it’s no longer lumpy or flaky.

In a mixing bowl add oats, stevia with chia seeds.
