These high soluble fiber, low sugar peanut butter balls are a great healthy snack for busy families on the go. I put the oats in a food processor to make them almost into an oat flour and then add chia seeds for a fun crunch rich in Omega-3s. You may use any peanut butter, but I did enjoy using the creatively flavored PB Crave peanut butter as they offer many great low sugar options. For this batch I used the Coconut Milk Chocolate PB Crave which only has 4 grams of sugar per 2 tablespoon serving. Overall, the finished Peanut Butter Energy Balls only have about 4 grams of sugar per ball.
You will need:
- 1 cup of rolled oats
- 1 tablespoon honey
- 1/3 cup peanut butter ( I used the PB Crave Coconut Milk Chocolate which is very low sugar!)
- 1 tablespoon chia seeds
- 1 tsp vanilla extract
- 2 packets of Stevia
- dried coconut flakes (unsweetened) to sprinkle or roll in
How to Make:
Pulse rolled oats in food processor until it’s no longer lumpy or flaky.
In a mixing bowl add oats, stevia with chia seeds.
Warm up the peanut butter and add to bowl with vanilla extract. Mix well.
The texture should be moist yet crumbly.
Using clean hands, mold mixture into balls.
Roll or top with dried coconut.
Store in Tupperware or glass container and enjoy!
