Nasoya Curried Tofu Toast Recipe

Step aside avocado toast, this curried Nasoya Tofu toast is stealing the show! Packed with about 10 grams of protein per serving, this loaded toast is a flavorful breakfast or a satisfying lunch.  I used the Nasoya Silken Tofu which is the softest of their tofu offerings. They also have  Firm TofuExtra Firm Tofu or Super Firm Tofu.  All of the tofu options would work with this recipe, but I chose the Silken variety because I wanted my mixture to be soft with almost a creamy texture.

Nasoya Tofu is made with simple and clean ingredients like water, soy, and salt. They are also non-GMO Project Verified, USDA Organic, cholesterol free, gluten-free, and made with no preservatives. Tofu is super versatile and takes on the flavors of spices and sauces that you choose to use while preparing.

Curried Tofu Toast

You Will Need:

  • 1 block of Nasoya Silken Tofu
  • 1 red bell pepper, diced
  • 1/2 cup of chopped chard or spinach
  • pinch of salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red pepper

How To Prepare

Saute 1/2 cup of rainbow chard or spinach with diced red pepper on medium heat with a tablespoon of olive oil.  While the vegetables are softening, in a separate bowl, combine one block of Nasoya Silken tofu with half a teaspoon of turmeric, a quarter teaspoon each of cumin, red pepper, garlic & onion powder with a healthy pinch of salt. Mix until everything is well-incorporated but leave it a bit chunky.

Add the tofu mixture on top of the vegetables. Leave uncovered and stir occasionally.

You will want to cook off some of the liquid. Once the tofu starts to condense, it’s ready to serve on top of a large slab of bread or a piece of toast. Scoop as much mixture onto your bread that will fit. The juices will soak into the break (toasted or not).  Top with some diced scallions, pepper, or additional salt if needed. Enjoy! So tasty!
