Healthy Gingerbread Cookie Overnight Oats

It’s hard being good in a sea of holiday goodies and treats, but it doesn’t mean that we can’t enjoy seasonal flavors! Gingerbread cookies are my most favorite cookies on the planet, so I wanted to make a healthier treat that brings in those flavors.

Using Greek Gods Greek Yogurt as a healthy base ingredient, I have been making these delicious ‘Gingerbread Cookie Overnight Oats’ for my family. I use Greek Gods Honey Vanilla yogurt in my recipe as it makes these breakfast oats so creamy and the added ginger and cinnamon spices bring in that Gingerbread cookie flavor!

The Greek Gods Greek-style yogurt uses milk sourced from cows that aren’t treated with growth hormones like rBST*, and it is an excellent source of calcium and has seven different live and active cultures.

These ‘Gingerbread Cookie’ overnight oats are PERFECT for busy, early mornings. It’s also such a fun breakfast to look forward to! You can make these overnight oats in advance (not just at night) as the jars will be fresh and tasty in the fridge for up to 3 days.

You Will Need:

  • 4 – 8oz serving cups or 1/2 pint jars with lids
  • 2 cups of quick oats
  • 1 cup of Greek Gods Honey Vanilla Yogurt
  • 2 cups of milk or almond milk
  • 1 tsp cinnamon
  • 1 tsp of powdered ginger

How To Prepare:

Mix all of the ingredients in a glass mixing bowl. Divide the mixture up into the 1/2 pint jars and screw on lids, or put in bowls and cover.

Let the oats sit overnight in the refrigerator, or at least 8 hours.

Simpy uncover and enjoy! I added a little gingerbread man cookie on top of mine because it IS the holiday season after all, and as the breakfast is packed with calcium and protein from the yogurt and fiber from the oats., it’s ok to be a little naughty! Don’t tell Santa.

Greek Gods Greek Yogurt is conveniently found at Walmart in the dairy aisle, in the yogurt section, on the lower shelf. I was able to pick up a couple of tubs while doing some other quick holiday shopping!
