Easy Pineapple Rice

Pineapple rice has so much going on that it could be a side dish, or a meal in itself. I like to put lots of colorful veggies in it for visual and for the bonus health benefits. Kids typically like pineapple rice because it’s naturally sweetened with fresh pineapple.

Cook the rice in a rice cooker to save a step. I add 1/2 tablespoon of turmeric in it to give it a nice golden color and the spice complements pineapple.

You will need:

  • 2 cups rice – 4 cups of water (rice cooker)
  • 1/2 tablespoon turmeric
  • 1 fresh pineapple
  • 1 red bell pepper
  • 1/2-3/4 cup frozen organic peas
  • green onions
  • optional: soy sausage
  • 1/2 teaspoon red pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seed oil
  • sesame seeds (optional)

How to Prepare:

Cook rice in rice cooker. Make sure to mix in 1/2 tablespoon turmeric before the cooking process.

While rice is cooking, put in diced red pepper and soy sausage in a pan and saute in 1/2 tablespoon sesame seed oil (save the other 1/2)

Add in frozen peas after the red pepper looks softened.

When the rice is done, add the remaining sesame oil and soy sauce to the pan with the vegetables and sausage in it and mix in the rice slowly. You want to lightly ‘fry’ the rice.

Mix in 2 cups of diced fresh pineapple. You could use canned pineapple in a pinch, but it’s just not the same! Pineapple should be lightly cooked.

When everything is well incorporated, serve pineapple rice in a bowl and top with green onions and sesame seeds if you have them.
