Creamy Pesto Flatbread Recipe with Barilla

I love making pizza dough in my bread mixer! I start it in the morning & then I have dough ready to go for lunch or dinner.This creamy pesto flatbread pizza is easy & perfect for lunch! Barilla Creamy Genovese Pesto is a flavor-packed, versatile, and super convenient for a quick tasty pizza . Imported from Parma, Italy, it’s made with fragrant Italian basil and freshly grated Italian cheese.

The Barilla Creamy Genovese Pesto comes in a 6.2 oz jar, and a little goes a LONG way! It’s super flavor packed, so I can just spread a little across my pizza dough and add some extra toppings and it’s good to go! To preserve the natural color of basil and the fresh aroma of Italian
Cheese, Barilla minimizes the handling of ingredients and rapidly prepares their recipe in as little as three hours from the start of ingredient preparation to the tightening of the lid.

You Will Need:

  • 1-1/3 cups warm water (between 100-110°F)
  • 2 – 1/4 teaspoons  instant yeast 
  • 1 Tablespoon granulated sugar
  • 2 Tablespoons good quality olive oil
  • 1/2 teaspoon salt
  • 1/4 cup wheat germ
  • 3-/2 cups  all-purpose flour, plus more for hands and surface
  • 6.2 oz jar of Barilla Creamy Genovese Pesto
  • 3/4 cup roasted or fresh cut cherry tomatoes
  • 1/2 cup mushrooms (any variety) previously cooked or raw

How to Make:

Pizza Dough

In a breadmaker, add the warm water, yeast and sugar. Let it sit for 15 minutes or so until it looks a little frothy from all that yeasty action.

Add the flour, salt, wheat germ and olive oil. Select the “DOUGH” mode on your bread mixer and wait!

When the dough is complete, it will have to rise for 1 hour.

Using oiled hands, spread and stretch the dough out on a greased pizza pan. You may need a little extra flour on a surface to manage and manipulate the dough. I’m not an expert dough ‘tosser’ but I do stretch it back and forth and having non-sticky hands helps a lot!

Spread a thin layer of the Barilla Creamy Genovese Pesto and top with vegetables of your choice.

I used roasted cherry tomatoes and lightly cooked mushrooms. You may add fresh tomatoes and fresh mushroom if you’d like on your pizza/flatbread (no need to previously cook it). Other topping ideas: walnuts, feta cheese, sliced grapes and top with fresh arugula when it comes out of the oven!

BONUS PESTO IDEA!

Have some pesto left over? Cut some thick French or Italian bread (or any day old bread!) into large chunks and toss with the remaining creamy pesto. Spread onto a greased baking pan and bake at 350 for 8 or so minutes until toasty. These easy croutons are so delicious on a salad!
