I am always looking for ways to add more plant-based protein to my family’s diet, and Barilla ProteinPLUS pasta is just the ticket! I love that Barilla ProteinPLUS pasta is GMO-free and the protein is sourced from chickpeas, lentils, and egg whites. Pasta just also happens to be a fan favorite at my household, so this is a great choice for easy dinners.

This Coconut Curry vegetarian pasta recipe is a departure from most traditional pasta dishes. The Indian spices and coconut milk make a light, yet flavorful, sauce infused pasta. It’s also served hot over a bed of fresh spinach, so the hot curry sauce wilts the greens under the pasta. It’s a great way to add extra vegetables to the dish, yet one less vegetable to ‘cook’!

You Will Need:

Serves 6

  • One box of Barilla ProteinPLUS Penne Pasta
  • 1 Can of light Coconut Milk (you may use regular Coconut Milk as well, but the sauce will be thicker and you may need to add more water)
  • 1/2 Cup Water
  • 2 Tablespoons Olive Oil
  • 1 Red Pepper
  • 1 Zucchini
  • 1/2 Cup Fresh Basil Leaves
  • 1 Tablespoon of Garam Masala
  • 1 Tablespoon Tumeric
  • 1/2 Teaspoon of Cayenne Pepper
  • 1-2 Cloves of Garlic, mashed
  • 1-1/2 Teaspoon Salt (or per preference)
  • 1 16 oz Bag of Fresh Spinach

How to Prepare:

Dice up vegetables and basil leaves into pieces no larger than a quarter.

Pour in coconut milk into a saucepan and add 1-1/2 tablespoons olive oil and water. Stir in the garam masala, turmeric, and cayenne pepper. Heat on low and stir continuously until spices are blended in and sauce looks yellow.

Barilla ProteinPLUS Penne

Add in fresh vegetables, garlic and basil to sauce and simmer on low for 10 -12 minutes.

While the sauce is simmering, take out a pasta pot, bring 4-6 quarts of water to a boil. Add 1/2 tablespoon of olive oil and pinch of salt to water. Add one box of Barilla ProteinPLUS Penne Pasta to water and boil for 11 minutes until ‘al dente’.  Stir occasionally. 

The Barilla ProteinPLUS Penne Pasta is nice and hearty when cooked al dente and will hold up great to hot or cold sauces. In addition to the extra protein per serving, there is also 7 grams of fiber!

Drain and plate hot pasta over a bed of fresh spinach leaves (about 2 cups) in a shallow bowl, or pasta bowl. Put a generous serving of Coconut Curry sauce and vegetables over the pasta. Season with additional salt and pepper.

Have leftovers? Simply pour the remaining sauce with vegetables over the pasta and store in an airtight container. This Coconut Curry pasta dish is a great chilled salad as well!
