Honied Pear & Thyme Tart with Botanical Cocktails

Honied Pear & Thyme Tart with Botanical Cocktails

I’m SO ready to entertain again. Now that summer is almost upon us, I’m ready to welcome my friends back to my home, hang out, snack on delicious food and drink delicious beverages. What I’m not ready for is the hours of prep work prepping for a social gathering.

When tight on time, but need to impress, I bake some easy tarts (sweet and/or savory) using store made roll-out pie dough or puff pastry. This yummy pear tart with ricotta cheese can be ready in less than 40 minutes (including prep time)! Pair with delicious HAUS beverages, and my presentation is complete. HAUS beverages are created naturally with real fruits and botanicals, not artificial flavors.

You may serve HAUS chilled and as a standalone like a glass of wine.  However, I like to make a spritz by adding a little bubbly water and ice to a glass and topping off with a fragrant HAUS beverage. They have the flavor complexity of a cocktail, but are low enough in alcohol – stronger than wine, lighter than whiskey – that you can enjoy them all evening (or afternoon). Some cool fragrant offerings: Citrus Flower, Grapefruit Jalapeño, Ginger Yuzu, Spiced Cherry, Rose Rose’, Lemon Lavender and Bitter Clove.

The family behind the HAUS beverages source many ingredients from their own ranch, and responsibly source the rest from purveyors from around the world who also supply Michelin-stared restaurants!

Honied Pear & Thyme Tart Recipe

Serves 4-5

Preheat oven to 375 degrees

Prep Time: 15 minutes, Bake Time: 17 minutes

YOU WILL NEED

  • 2 barlett pears
  • 2 tablespoons quality honey
  • fresh thyme sprigs
  • 4 -5 tablespoons of ricotta cheese
  • cardamom
  • one sheet of pie dough

HOW TO PREPARE

Using thawed store bought organic pie crust dough, roll it out or unroll dough onto a greased cookie sheet. It doesn’t need to be perfect in shape, but roll out to about 1/4″ thick.

Spread ricotta cheese out across the dough and evenly distribute.

Slice pears lengthwise around the core in thin (like 1/8″ or less) slices and arrange on top of the ricotta. It’s OK if they overlap a little bit and feel free to be creative.

Leave a little dough around the perimeter. You may fold up the edges on top of the pear slices.

Sprinkle a few dashes of cardamom on top of the pears.

Drizzle honey across the pears and dough. If the honey is not easy to pour, put it in a glass container and microwave for 10-15 seconds to heat up.

Bake tart in the oven at 375 degrees for about 15-17 minutes until the edges are golden.

You should be able to gently LIFT the entire tart (I used two large flat spatulas to assist me) or slide it off onto a cutting board of other pretty serving platter. Sprinkle washed and dry fresh thyme leaves over the entire tart.

Serve with HAUS cocktails and enjoy!
