San Diego may have lost their professional football team to Los Angeles, but our love of football has not diminished! High School football is in full swing and we’re more excited than ever to cheer on our local teams. For evening ‘Friday Night Lights’ games, I like to prepare food in the yard for our neighborhood friends to enjoy before they head over to the big game.

Some of our friends don’t eat meat, so my Veggie Chili with MorningStar Farms® Veggie Pulled Pork recipe is the perfect hearty and tasty meal before a lengthy football game. Usually, my meat-eating friends prefer the vegetarian options that I prepare because they are so delicious.

Walmart has a great selection of MorningStar Farms® products in the frozen section, so I always stock up when I shop there.

 

I was so excited when the new MorningStar Farms® Veggie Pulled Pork came out because it’s very easy to prepare and a versatile plant protein meal starter.  This chili recipe is a satisfying meal for cool Fall evenings and since a crock pot is used, you can practically ignore it until time to eat!

You Will Need:

  • 1 large crock pot
  • 1 bag of MorningStar Farms® Veggie Pulled Pork
  • 2 cans of kidney beans  (rinsed)
  • 1 can of black beans (rinsed)
  • 1 diced green pepper
  • 1 diced jalapeno
  • 1 cup of frozen corn
  • 1/2 large or white onion, or a whole small onion (diced)
  • 2 tablespoons of chili powder
  • 1 tsp of salt
  • 2 cups of water

Optional Toppings

  • Cheddar Cheese
  • Sour cream
  • Cilantro

How to Prepare

As this recipe uses a crockpot, you can literally dump in all of the ingredients, mix well and set it on high for 4 hours.

If you are in and out of the house, just make sure to check on it occasionally to see if the chili needs more liquid, but other than that, this is the easiest recipe ever!

Set crock pot to medium or low when everything is hot and the veggies are cooked through.

Let guests serve themselves and make sure to offer lots of toppings such as shredded cheese, sour cream, green onions, heirloom tomatoes, and cilantro.
