Mean Green Thai Curry Recipe

Cold? Warm up with my mean green thai curry recipe! You don't have to be precise when doing this one, and it's quick!

My beautiful Cuisinart food processor just blew up. I've had the thing forever though, and I put it through hell. So, tonight I pulled out the blender and made some my Mean Green Thai Curry sauce.

You will need:

2 small red chile peppers. I just happened to have 2 red ones in my garden. pluck! pluck! I use them whole, but if you want to tone down the heat, seed them and just leave a ....t . i . n . y ...few.

1 can of coconut milk. I used 'light' from Trader Joes. Full fat tastes creamier, but I am watching my ever-expanding waist line.

handful of fresh cilantro

handful of fresh basil leaves

thumb size of fresh ginger (peel the skin off)

1 tsp of cumin

1/2 tsp of cayenne (skip if you don't like it too hot)

squeeze juice from 1 small lime

About 2 tablespoons of soy sauce. If you like salt, add more. You can also add fish sauce, but I am out!

And, if you have it, one stalk of lemon grass. I just planted one (they are so easy), so I just walked out to the garden.

So, blend all this goodness, and then pour into a small sauce pan to heat.

Serve over some quick stir-fried veggies, and serve over rice. I happened to have green beans, carrots and zucchini. You can pretty much use whatever you have handy though!
